baking - scrummy scones.............

I have been a bit neglectful on the home baking front since getting back from holiday, so after spying some clotted cream in the supermarket I decided to whip up a quick batch of plain scones.

I used an old favourite Delia Smith recipe which always works well -  preheat oven 220c or gas mark 7

225 g self raising flour
40g of butter
150mls of milk
1-2 tablespoons caster sugar
a little extra flour

1. sift flour and rub in fat, then stir in sugar.
2. gradually add the milk (I mix it in with a knife)
3. roll out to about a 2cm thickness and use a 5cm cutter ( will make about 12 scones)
4. pop onto a baking sheet and dust with a little extra flour and cook for about 12 - 15 minutes.

So quick - serve with jam and clotted cream - yummy........


They didn't last long.................

  4. Those scone have risen very impressively! I never make scones until June or July, then all the fresh strawberries have me in a frenzy of buying clotted cream and making strawberry jam. x

  5. Oh my! Those look amazingly good. There is nothing better than a warm scone, smothered in butter and jam. Unless it's a warm scone smothered in clotted cream and jam. :-)
